Let’s talk about Fermented Foods!! Part 4
Soy sauce-based all-purpose seasonings, spices, and sauces are convenient seasonings that can be used alone to flavor dishes. We mentioned earlier that there are five types of soy sauce, each with its own food pairings. For example, dark soy sauce is good for seasoning meat and fish. Light soy sauce is for vegetable dishes. Tamari is used for sushi and sashimi, and for teriyaki because of its beautiful reddish color when heated.
Japan also has an assortment of cooking sauces made from soy sauce and seasonings made from soy sauce cake. These seasonings come in handy when you are not sure what seasoning to use or when you want a kick of flavor.
Nihonichi-shoyu(Oka Naosaburo Shoten): All in one Spice and Shoyusco
In 1787, Chubei Oka, an Omi merchant, established a soy sauce brewery in Omama. For more than 200 years, we have been producing soy sauce using the same vats that have been handed down from generation to generation, focusing on “natural brewed soy sauce made in wooden vats”. Today, the production of naturally brewed soy sauce, which is fermented and aged by natural temperature fluctuations, still relies on the skill and intuition of artisans.

One sprinkle and it’s done! Developed by a traditional soy sauce manufacturer, this is a new type of seasoning. It is a versatile seasoning made by mixing soy sauce cake, soy sauce, salt, pepper, garlic and several other spices. We recommend this seasoning for those times when you can’t decide which seasoning to use, or when you want a little kick of flavor. Use it as a seasoning for steaks, stir-fries, salted pasta, fries, soups, stews and hotpots. Great for packing, grilling, camping and other outdoor activities.
